Today is National Avocado Day!
I love avocados. I love them for many reasons. Not only are they delicious tasting, they are delicious for our bodies!
Avocados are an unique fruit as over 70% of their calories come from fat. While "fat" has been taboo for many years, people now recognize the heart-healthy benefits of monounsaturated fats- the kind of fat that avocados contain. Another nutrient that avocados are high in is fiber. Most Americans don't get enough fiber in their diet. Consuming just half of an avocado will provide you with over 4 grams of fiber that helps control blood sugars, keeps bowel movements regular, and promotes weight control. The list of nutrition benefits doesn't end there. Avocados also contain folate, vitamin K, copper, riboflavin, potassium, and B vitamins- just to name a few!
Today we celebrate the avocado- enjoy one on some salad, beans, eggs, or in guacamole. I am going to keep it simple and enjoy half an avocado topped with a little Everything But the Bagel seasoning- YUM!
