Who doesn't love Taco Tuesday? Tacos are so easy to make and can they can pack a lot of great flavor and nutrition. This Tuesday I decided to make some summery, antioxidant-rich shrimp cabbage tacos!
First, I used a mandolin to thinly slice some red cabbage. Cabbage not only adds a nice crunch, but the red color indicates that it is full of anthocyanin, a powerful antioxidant. I tossed the cabbage with cilantro and lime for a light, Mexican flavor.
Next, I thawed some shrimp straight from my freezer and quickly sautéed them in a little olive oil and onions. Shrimp is a great source of protein- and a secret source of antioxidants too!
Topped with a little bit of sliced jalapeño and Greek yogurt/hot sauce drizzle for some heat and I’m done!
